Turkey Meatballs with Zucchini Noodles and Side Salad

Ingredients

For the Turkey Meatballs:

  • 1 pound ground turkey

  • 1/2 cup whole wheat breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup finely chopped onion

  • 2 cloves garlic, minced

  • 1 egg, lightly beaten

  • 1 tablespoon chopped fresh parsley

  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Cooking spray

For the Zucchini Noodles:

  • 3-4 medium zucchini

  • 1 tablespoon olive oil

  • Salt and black pepper to taste

For the Side Salad:

  • 4 cups mixed salad greens

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup sliced cucumber

  • 2 tablespoons balsamic vinaigrette dressing

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, chopped onion, minced garlic, beaten egg, chopped parsley, dried oregano, salt, and black pepper. Mix well until all the ingredients are evenly combined.

  3. Shape the turkey mixture into meatballs, about 1-2 inches in diameter.

  4. Place the meatballs on a baking sheet sprayed with cooking spray. Make sure to leave some space between the meatballs.

  5. Bake the meatballs in the preheated oven for 18-20 minutes or until cooked through and browned.

  6. While the meatballs are baking, prepare the zucchini noodles. Using a spiralizer or a vegetable peeler, create long, thin zucchini noodles.

  7. Heat olive oil in a large skillet over medium heat. Add the zucchini noodles and sauté for 2-3 minutes until slightly softened. Season with salt and black pepper to taste. Set aside.

  8. In a separate bowl, combine the mixed salad greens, cherry tomatoes, and sliced cucumber. Drizzle with balsamic vinaigrette dressing and toss to coat.

  9. Once the meatballs are cooked, serve them with the zucchini noodles and side salad.
